Healthy breakfast

A fast, healthy breakfast: English muffin with egg white, turkey bacon, and spinach. (R. J. Mickelson)


To keep free of Starbucks temptation or a mealless morning, I whip-up this easy to make, healthy alternative to the greasy and calorie-laden breakfast sandwiches at fast-food joints and in the frozen food aisle. It beats the monotony of oatmeal.

Healthy Breakfast Sandwich


Ingredients:
2 egg whites

1/2 cup fresh spinach leaves
2 strips turkey bacon
1 toasted whole-wheat English muffin, split in half
Salt and pepper to season


Directions:
1. Cook the bacon in the microwave for one minute and transfer to paper towel to remove grease.
2. Cook the egg whites in a microwave-safe container until no longer runny. (Frying adds calories and unnecessary oil.)
3. Wash spinach leaves and dry.
4. Layer eggs, bacon and spinach between the muffin and season.
