Recipe: Vegetarian Tacos with Jicama Tortilla
Putting together vegetarian tacos on 'Top Chef.'
Ingredients:
1 jicama, sliced super thin (use slicer)
1 avocado, mashed
1 tomato, diced
1 papaya, diced and mashed
1 tablespoon coriander, cracked
1 teaspoon cinnamon
Salt and pepper to taste
1⁄4 bunch cilantro, chopped (reserve chopped stems)
Drizzle of olive oil
6 key limes, juiced
2 limes, juiced
Directions:
1. Combine avocado, tomato and papaya in a bowl and season with coriander, cinamon, salt, pepper, cilantro and olive oil. Mix well.
2. Add lime juice and key lime juice and mix well.
3. Lay out jicama slices and spoon the avocado mixture onto the slices, dispensing evenly.
4. Roll the slices like tacos.
5. Plate rolled tacos and season top with cilantro stems.
Serves 2.
