For the pork belly
½ teaspoon of fennel seed
1 star anise
1 teaspoon cumin
1 teaspoon coriander
1 tablespoon sugar
2 tablespoons salt
1 teaspoon whole black pepper
1½ pounds of fresh pork belly
1 onion
1 carrot
4 cloves of garlic
2 tablespoons of chopped ginger
1 Granny Smith apple
2 tablespoons of olive oil
2 tablespoonsof soy sauce
½ bunch of cilantro
