Henry Meer's strawberry shortcake
How to make the perfect strawberry shortcake
12 ounces butter
2 ounces sugar
1 1/2 cups cake flour
1 ounce baking powder
3 eggs
2 cups heavy cream
Preheat oven to 325 degrees
Combine flour and baking powder
Combine eggs and cream and beat lightly with a fork
Cream butter and sugar until light and fluffy
Using an electric mixer set at slow speed, beat the flour mixture into the butter and sugar all at once
Add egg/cream mixture all at once and mix on medium speed to combine. The batter will be sticky
Using an ice cream scoop, drop onto parchment-lined sheet pan and bake for 12 minutes or until golden brown
1 cup heavy cream
2 tablespoons powdered sugar, plus extra for sprinkling
Seeds from one vanilla bean or 1/2 teaspoon vanilla extract
Whip cream to soft peaks
Add powdered sugar and vanilla and continue to whip until firm peaks form
2 pints fresh strawberries, sliced lengthwise
