New potatoes with mint
Serves 8
2 pounds of small to tiny very fresh organic potatoes, washed
1/4 cup olive oil
2 tablespoons butter
one cup of mint leaves
1. Preheat the oven to 400˚ Fahrenheit.
2. Use a ceramic baking dish that can be a serving dish. Add the potatoes, two cups cold water, olive oil and one teaspoon sea salt. Stir to combine.
3. Bake in oven until tender. Remove from the oven and add butter and mint leaves and stir to combine. Season with salt and pepper and serve hot.
