The New Amsterdam Market will return to the Seaport on Sun., Oct. 25 from 11 a.m. to 4 p.m. The focus will be on meat production, sourcing, and butchering. Chefs Josh Applestone of Fleisher’s Grassfed and Organic Meats and Tom Mylan of the Meat Hook will break down an entire side of pig and discuss how the various cuts are used in home and restaurant cooking.
“We have four butchers who are part of a new generation of butchers that are opening shops and working directly with farmers….so you know exactly where every piece of meat comes from,” said director Robert LaValva.
Present at the event on South St. between Beekman St. and Peck Slip will be farmers and meat ranchers, regional distributors, butchers, and purveyors who can trace and identify the source of all the meat that is sold to the public. They will host a cutting demonstration.
“We expect our usual crowd of between 5,000 and 7,000 people, but we always hope to get more,” said LaValva. “Maybe we’ll shoot for 8,000 this time.”
